Cheeseburger Zucchini Boats


Cheeseburger Zucchini Boats



3 medium sized zucchini
3/4 lb ground turkey
1 medium onion, chopped
1/2 a green pepper, chopped
2 cloves of garlic, minced
mushrooms, sliced
1 large tomato, chopped
1/2 tsp garlic powder
1/4 tsp oregano
1/2 tsp salt
1/4 tsp pepper
1/2 tsp italian seasoning
cheddar cheese

Cut zucchini in half lengthwise, and then in half again to make 4 'boats' out of each one.  Scoop the seeds and insides out leaving a shell, set aside. Lightly brush the boats with olive oil, and then sprinkle with garlic salt and pepper and place in a 400 degree oven while preparing the remaining ingredients.

In a large pan, saute the meat, onion, green pepper and garlic until the meat is cooked, add the mushrooms and zucchini centers.  Once cooked, add the tomato and seasonings.  Cook just a minute or two, until the tomato is soft.  Scoop into the zucchini boats.  Top with cheddar cheese.  Bake at 400 degrees for 10 minutes or until cheese is bubbly.


We had extra filling, so I baked it in ramekins. 

The kids LOVED the filling, but weren't much on the 'boats' themselves.  Kaitlyn kept finding hidden treasure and cheering every time she found a mushrooms.
