Baked Oatmeal

Cranberry Almond Coconut Baked Oatmeal




Baked Oatmeal

1/2 cup brown sugar (or sweetener of choice)
1 cup oil (olive, coconut, or melted butter)
4 eggs
6 cups old fashioned oats
4 tsp baking powder
1 tsp salt
2 cups milk
**Optional mix ins- cinnamon, raisins, vanilla extract, unsweetened dried coconut, dried cranberries, choppped nuts, fresh apples, etc. ( See notes below for our fav. version)

Mix wet. Mix dry. Combine wet and dry. Pour into a 9" x 13" pan. 
Bake in a preheated 350 degree oven for 35-40 minutes, or until golden brown on top.
Serve piping hot, with warmed milk poured over top (if you like it that way!)



Notes:
Our favorite mix in combo is chopped almonds, unsweetened dried coconut, dried cranberries, a touch of cinnamon and a splash of vanilla extract.

This is my mother in law's baked oatmeal recipe, with the brown sugar cut in half, and the white sugar omitted.  It's also doubled, which is highly recommended as it's delicious leftover.

I grind my own almond flour, and after I sift it, I save all of the pieces that don't go through the sieve to use in this recipe.
