Quick Easy and Delicious








This was our dinner last night. Kaitlyn ate it, but didn't love it, however both Kenny and I really liked it. It was so quick and easy and had so much flavor!


1. Cook brown rice according to directions on package, omitting butter.


2. Chop onions, peppers, and zucchini (sliced and quartered)
 
 
 3. Saute onions, peppers and several cloves of garlic until onions are almost translucent


4. Season with cilantro (i used dried, but would have preferred fresh), cumin, garlic powder, salt, pepper, and oregano)


5.  Add zucchini and 1/2 quart home canned tomatoes and juice (could substitute a can of diced tomatoes)


6. Add one can of Black Beans (rinsed and drained) and cook over high heat until the liquid is mostly absorbed and the veggies look done.


 7.  Place cooked rice in a dish, mound veggie and black bean mixture over top. Slice avocado and tomatoes and place those on top. Sprinkle with fresh cilantro if you have it.


8. Serve with Tapatio.  Add extra when trying to induce labor. ;)





Black Beans and Veggies over Rice

1 cup Brown Rice
2 1/4 cups water
1 large onion, chopped
1 bell pepper, chopped
3 cloves of garlic, pressed
1 medium zucchini, sliced and quartered
2 Tbsp olive oil
3/4 tsp dried cilantro
3/4 tsp garlic powder
3/4 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
1/2 tsp  oregano
1/2 quart canned tomatoes in juice (or 1 can diced tomatoes, undrained)
1 can black beans, rinsed and drained
2 avocado, sliced
2 tomatoes, sliced 
fresh cilantro for garnish
Tapatio

2. Chop onions, peppers, and zucchini. 

3. Add olive oil to a sauce pan. Once hot, saute onions, peppers and garlic until onions are almost translucent.

4.  Add the spices and stir occasionally.

5.  Add zucchini and tomatoes in juice, cook for several minutes.  

6. Add black beans and cook over high heat until the liquid is mostly absorbed and the zucchini is done.
 
7.  Place rice in a dish, mound veggie and black bean mixture over top. Slice avocado and tomatoes and place those on top. Sprinkle with fresh cilantro if you have it.
