GF Fresh Ginger Apple Berry Rhubarb Crisp

Fresh Ginger Apple Berry Rhubarb Crisp


The original recipe called for 3 cups of chopped rhubarb, but what i was given in our CSA was only about a cup, so I used what i had. I'm sure any fruit combination would be good.  Like peaches and blueberries!

In a large bowl combine:

1 cup rhubarb, chopped (cut stalk in half lengthwise then cut into 1/4" slices)
1 cup apple, chopped
1 cup berries (I used the superfruit blend from costco that has blueberries, blackberries, cherries, pomegranates, etc.)
1/2 cup of sugar
1/2" knob of fresh ginger, peeled and grated
1/3 cup orange juice
1/3 cup rice flour

Toss together and place into a greased 9" x 13" pan.

Then Mix:

1 cup oats
1/2 cup chopped walnuts
1/2 cup softened butter
1/4 cup brown sugar
1/2 tsp salt

Mixture will be crumbly.  Sprinkle over the rhubarb mixture.  Bake at 350 degrees for 20 minutes, or until the topping is golden brown and the bottom is bubbling.  Serve with ice cream or whipped cream.


The hardest part of this recipe was not tasting a spoonful before we got to our friends house and dessert was served! :) What combinations will you try?
