Impossible Pie with Homemade Bisquick

Very Veggie Impossible Pie

  In my last post I mentioned that we made a home made chemical free, whole wheat Bisquick recipe and that I would be trying it out in our Impossible Pie recipe.  You may be thinking, "What is an Impossible Pie?" and I'd like to tell you it is a very possible "pie" to make.  It is very similar to a quiche, yet it is crustless, but kind of makes it's own crust as it's baking. We love them, and love them even more now that we've found a way to make them healthier!

Well we tried our usual recipe, just substituted our homemade baking mix (recipe at the end of the post, or find the link in our previous post) instead, and all agreed that we like it even better than when we use the original Bisquick! It is such an easy recipe and it is super basic and can be accommodated to whatever leftovers, veggies, meats, and cheeses you have on hand or in mind! Some of our favorites are:
  • Bacon, Onion and Swiss cheese
  • Imitation Crab (although i just read the ingredients for that and am thinking we won't be having it much any more) Cream Cheese and Peppers
  • Taco 
  • Veggie
  • Be creative and come up with your own, the possibilities are endless!

Here is the recipe we used:

 Very Veggie Impossible Pie:

1.  Grease a pie plate. Preheat oven to 400 degrees.
2.  Add veggies to pie plate. Use as much or as little as you desire, you can see here that my pie plate is mounded rather high!
                                        A couple handfuls of spinach, chopped
                                       1/2 of a green bell pepper, diced
                                       1 small onion, diced
                                       10 grape tomatoes quartered

 3.  Sprinkle Veggies with shredded cheese. We used about 1/2 a cup of Extra Sharp Cheddar Cheese

4.  Whisk in a bowl until well blended:
                                                  3 eggs
                                                  1 1/2 cups of milk
                                                  3/4 cup of homemade Bisquick mix
                                                  1/4 teaspoon Salt
                                                  1/8 teaspoon Pepper
                                                  1 teaspoon Garlic Powder
                                               2 teaspoons Tastefully Simple Spinach and Herb Seasoning Blend

5.  Pour over veggies and cheese.  If all of your toppings are not covered, you may need to add more milk/egg/baking mix. Our pie plates are 9" and if you have a 10" or use more or less toppings you may need a little more. To do this mix 1 egg, 1/2 cup milk and 1/4 cup baking mix, and pour over top. I actually started with a two egg mixture, and needed to add a third.

6.  Bake until Golden Brown and an inserted knife comes out clean. About 35-40 minutes.


A little darker than golden brown, but we're potty training and easily distracted by it!

 7. Let stand 5 minutes before cutting.  Enjoy!

Homemade Bisquick Mix

In case you'd like to make your own Bisquick Mix, here is the recipe I followed. It is altered slightly from the original.

Ingredients:

  • 3 cups unbleached all-purpose flour
  • 3cups whole wheat flour
  • 3 tablespoons baking powder
  • 1 tablespoon salt
  • 1/2 cup cold butter

Directions:

  1. Measure the flour, baking powder and salt into a large bowl. Use a wire whisk to blend thoroughly.
  2. Cut in cold butter using a pastry cutter until thoroughly incorporated.
Store refrigerated in an airtight container for up to 4 months.

    I love the veggie ones. last one i did was broccoli and onion...

    Mom did a tomato basil one that was awesome!

    And I made a pizza one that was good and a little different than the norm...
