Portobella Mushroom Pizza

In our CSA pick up this week, we received some Portobella Mushroom Caps.  We love them over here, and since going gluten free have been wanting to make pizza's in them.  Well, I found a recipe on pinterest that sounded so fresh and delicious we had to try it, and just adjusted the recipe based on what we did/didn't have.  This is what we came up with:



Portobella Mushroom Pizza

First prep your ingredients.  For this recipe you will need:

1 large onion, chopped 
2 large tomatoes, diced
4 Portobella Mushroom Caps cleaned and stems removed and chopped
1 large garlic scape (or 4 cloves of garlic) minced
2 large green onions (or one leek)
1 Tbsp fresh lemon juice
5 basil leaves chopped

Start by Sauteing the onion, garlic and mushroom stems until the onions start to brown. 




Next add the tomatoes, green onions and a pinch of salt.  Saute just until tomatoes are soft.




Add the lemon juice and basil, and stir to combine.  Oil a parchment paper lined   baking sheet and place the mushroom caps on top.  Fill with your onion and tomato mixture.  Sprinkle with Parmesan cheese.





Bake at 400 degrees for 12 minutes.

Oil
1 large onion, choppe
1 large garlic scape (or 4 cloves of garlic) minced
4 Portobella Mushroom Caps cleaned and stems removed and chopped
2 large tomatoes, diced
2 large green onions (or one leek)
Pinch of salt
1 Tbsp fresh lemon juice
5 basil leaves chopped
Parmesan Cheese

In large saute pan, heat oil.  Add onions, garlic and mushroom stems.  Cook until the onion starts to brown.  Next, add the tomatoes, green onions and salt.  Cook just until the tomatoes are soft, then add lemon juice and basil.

Line a baking sheet with parchment paper and lightly oil.  Place the mushroom caps on the parchment paper and then fill.  Sprinkle with freshly grated parmesan cheese. If you have extra filling, place in a ramekin right on the baking sheet.

Bake at 400 degrees for 12 mins.
